hi carrie. yes. i have found a pastry that i LOVE.
it is from nourishing traditions.
1 1/3 cups unbleached white flour
pinch of sea salt
pinch of sweetener
1/2 cup butter, frozen
2 egg yolks
1 tablespoon cold water
sift dry ingredients in food processor. cut butter into 16 pieced and distribute in flour mixture. pulse several times until butter is pea sized pieces. beat egg yolks lightly and pour onto flour mixture, pulse once or twice. have water ready. turn on processor and pour water in. stop processor at once. turn crust onto waxed paper and squeeze into a ball. put in plastic bag and into fridge for several hours. roll out with extra flour when ready.
in this pie i sliced up peeled apple pieces (from our adventure down the street), cinnamon, few chunks of butter, rapadura sugar, nutmeg and a squeeze of lemon. if the apples are juicy, also add a couple of tablespoons of arrowroot.
bake for about 45 minutes at 275 degrees. yum. we have been eating it with fresh raw cream poured over top. tim doesnt like apple pie so ive been eating more than my share, i must admit. enjoy. xxoo
