We are packing to leave on a three week adventure to Vancouver Island to visit our dear friends. I made a chart to organize all of the major tasks into daily chunks to avoid a flurry of rushing. It was all going so smoothly that I threw in a purchase of 40 lbs of cherries. Hmmm.
But, honestly, when lucious fruit like this from our friends at Forbidden Fruit Orchard in Paradise (I know...it's no lie) comes around a mere once a year for a bleep of time shorter than a blink, how could I resist?
Winters here are long and these nuggets of yum, though a whole different fruit once dried, will delight us when the snow is stretched out everywhere we look.
We also made sweet and sour cherries from this book and pie, for immediate consumption. This pie is gluten free with almond and coconut flours, coconut sugar and coconut oil for the crust. Think shortbread cookie with fresh cherries. A pretty fine way to say our good-bye to Montana as we head west to the ocean playgrounds of my childhood for a stretch.

I looked up recipes using "coconut flour" as the search term. I have some in the fridge and wanted to use it. I also use the Gluten Free Mama recipe book and then make up my own alterations. That crust was pretty simple...some regular wheat flour with some almond flour (GF Mama) and some coconut flour then a bit of salt and coconut oil to get the right consistency. It didn't roll out like a traditional pie crust so I pressed it into the pan and then pressed it down over the fruit. Crumbly and delicious.

When I was little I used to pick cherries with my family and make kompot out of them. Those pics brought back tons of memories :)

What cookbook/site you use for your sweet recipes? I have Nourishing Traditions but I'm looking for more sources of healthy cakes/cookies recipes.
